The Just Ripe: Bachelder

I honestly can’t believe that I’ve been writing this amazing*cough* wine article for over a year; and haven’t once talked about Thomas Bachelder. Maybe a name you have heard before or maybe not, but you’re about to. If I had to and I’m talking ‘gun to my head’ pick my favorite top 3 winemakers from Niagara Thomas would definitely be on that list. It’s a tad swaying that he produces some very elegant and totally sexy Pinot Noirs & Chardonnays. Which may or maynot happen to be my favorite grape varietals. Can you really blame me though; who isn’t a Burgundy lover? From year to year Thomas tells a story of the Trois Terroirs. During harvest Thomas travels to 3 of the most amazing cool-climate Chardonnay and Pinot regions in the world; Burgundy, Oregon and Niagara. Each region, making wines of distinction that showcase traits of the earth from which the grapes are grown.

This wine smells like Key Lime Pie with a big emphasis on the crust and one to die for. Freshly baked and slightly toasted with the zest and fresh pulp of hand juiced limes hidden under a mountain of freshly whipped organic cream dusted with toasted coconut shavings. When it hits your mouth it instantly becomes this incredible textural explosion with a bit of soft, sort of yellow apple and salinity like the air around a misty ocean. The finish is about as long as ‘The Temptations’ song “Papa was a Rolling Stone”, that’s really long(insert 12 minute song link ‘here’). It’s not just the length of this wine that relates to the song either it is smooth, bright and sexy AF, a foot stomping, hand clapping totally groovy wine.

It’s finally March and just like everyone else, I am getting super excited for a plethora of good weather and maybe more white wine. Quantities are running low on this wine. My fingers are crossed in hopes you get to an LCBO near you and pick up one of these amazing 2015 Bachelder Niagara Chardonnay before they are all out!
